Grill Room on Las Olas: Meet the Chef

We are delighted to introduce, our Chef d' Cusine, Andres Arboleda.

Chef Andres brings more than 13 years of culinary expertise to the award-winning Grill Room on Las Olas, which is located at the elegant Riverside Hotel. Arboleda's vision is to incorporate traditional French techniques with tantalizing South American inspired fare to expand the current menu offerings of the Grill Room, one of Fort Lauderdale's most cherished American steakhouses. He has already begun by infusing exotic Latin flavors in the restaurant's daily specials, which now include fresh ceviche and light, citrus, 1 lb. lobsters, grilled with orange slices and basil au jus.

Colombian born Arboleda trained in Medelln, Colombia and relocated to the United States to pursue a culinary arts degree at the Art Institute of Fort Lauderdale. Arboleda had the privilege of working under world-renowned certified culinary Master Chef Klaus Friedenreich (CMC, AAC), one of the most respected professionals in the country. Chef Klaus is one of only 59 Certified Master chefs in the United States as recognized by the American Culinary Federation (ACF). He is also the recipient of the 2001 ACF National Chef of the Year award.

For the last 13 years, Chef Arboleda has propelled the success of many local establishments. He has left his mark on all aspects of the business, from innovative menu creation to original themed decor.

Arboleda began his South Florida career at Bones & Spirits Dry Aged Steakhouse in Weston. He then held the title of Sous Chef with the Carlson Restaurant Group. From there, Arboleda worked as Chef dcuisine at Cohiba Brasserie in Pembroke Pines, Big City Tavern on Las Olas Boulevard as well as Brio Mediterranean Bistro on Las Olas Boulevard.
